I’m a quality/compliance manager at a residential kitchen appliance company. In the last year, I reviewed roughly 2,000 induction cooktops before they reached customers. I’ve signed off on most—and rejected a surprising number over details that don’t appear in any brochure.
This guide is for anyone buying one cooktop for their kitchen, or a few for a rental or renovation project. If a supplier treats a single-unit order as too small to answer questions properly, that is useful information about the supplier.
I work at Zephyr, so I have a bias toward induction. That said, the checklist below is not a product pitch. It’s the process I use when evaluating any cooktop.
Before You Start: The Induction Reality Check
Induction cooktops heat the pan directly using a magnetic field. That means they are fast and efficient, but they only work with ferromagnetic cookware. If a magnet does not stick to the bottom of the pan, it will not heat.
Why does this matter? Because the top reason people return induction cooktops is not electrical failure. It is the discovery that half their cookware is aluminium or copper-core. Check your pans before you choose the cooktop.
Step 1: Check the Minimum Pan Size and Pan Detection
Every induction zone has a minimum pan diameter. Most won’t activate if the contact area is too small. If you use an espresso pot, a small milk saucepan, or a wok with a tiny base, ask for the minimum pan size per zone.
I’m not 100% sure of the exact minimums on every model—they vary by manufacturer. But an 11-inch zone often needs a 4-inch pan base. The spec sheet usually hides this in the manual, so ask.
Also test pan detection if you can. A good cooktop should shut off or stop pulsing when the pan is lifted. Some cheaper models keep output toggling, which is annoying and wastes power.
Step 2: Look at Real Power, Not Max Boost
Marketing says “3,700W boost” or “9,600W total power.” Those numbers are genuine, but they are not the whole story. Many induction cooktops share power between zones. If you run all burners on max, one zone may automatically downrate. That’s normal, not a defect.
What actually matters for installation is the recommended breaker size and wiring. The manual lists a circuit requirement—often 240V and 40A or 50A. If you are renovating, send that page to your electrician before the rough-in. It costs a lot less than upgrading after installation.
Actually, let me correct myself. The “max power” figure is the connected load, not the typical cooking draw. Most normal cooking uses far less. But your wiring still needs to handle the maximum possible, because the cooktop won’t know you are only boiling water.
Step 3: Inspect the Glass Surface and Edges
This is the step that most people skip, and it’s the one I care most about.
When I receive a batch of cooktops, I check the glass edges first. Chips on corners, uneven edges, and bubbles inside the ceramic glass are all reasons I reject a unit. In Q1 2024, I rejected 2.3% of incoming cooktops from one supplier because of a run of edge chip issues—I’d have to check the report for the exact number, but it was close. The vendor argued it was “within industry tolerance.” We disagreed—the edge chipping made the surface more likely to crack during transport.
In the showroom, do two quick things:
- Run a finger along the glass edge. It should be smooth. Sharp edges are a manufacturing problem, not a design feature.
- Place a large flat pan on the surface. It should sit flat without rocking. If it rocks, the surface is crowned or the pan is warped. Take a paella pan with you if you have one.
I’m not a glass engineer, so I can’t speak to the exact laminate chemistry. What I can tell you from a quality inspection perspective is that visible defects at unboxing usually predict bigger problems later.
Step 4: Test the Controls and Lockout the Way You Actually Use Them
Touch controls look sleek, but they fail in two ways: accidental activation and delayed response.
If you have kids, a lockout is no longer optional. Test the lock sequence in the store or at delivery. Does it require a long press, or can a pan handle press it accidentally? I tested one model where the lock button was directly below the front-left zone. A large skillet handle resting on the panel turned the lock on and off. To be fair, that was an older design, but the layout still matters.
Also check: can you increase heat quickly without tapping twenty times? Does the control panel flash a response within half a second? A laggy touch panel is annoying when you are searing and need to drop the heat now.
Step 5: Ask About Bridge Zones and Pan Shape Flexibility
A bridge function links two adjacent zones into one long rectangle. That is useful for griddles, oval roasters, and rectangular pans. A full-surface “zoneless” cooktop lets you place pans anywhere and detects them independently.
I used to think bridge zones were a gimmick. Then I watched someone cook a paella pan on a 76cm cooktop, and the rectangular heated area made a real difference in heat distribution. If your kitchen includes a griddle or large roaster, bridge flexibility is worth more than a 500W boost.
The question isn’t, “does it have a bridge mode?” It’s, “how does the bridge share power?” Some models hold a stable temperature across both zones. Others reduce power in one zone when the other is at high heat. Ask for the manual and read the power-sharing chart.
Step 6: Verify Certifications Before You Order
A UL or Intertek mark is not just a sticker. It means a third-party lab tested the product for fire and electric shock hazards. According to UL’s product database (ul.com/services), listed products have met published safety requirements as of January 2025. If you are in Canada, look for CSA or UL C-UL listing.
This gets into compliance territory, which I know from work, but I’m not a code official. Your local building inspector will always have the final word. That said, buying from a manufacturer that publishes its certifications is a faster path to approval.
Before you buy used, search the model number on the U.S. CPSC recall database (cpsc.gov). A safe cooktop from 2015 could have been recalled in 2017 for a control board issue. It’s a five-minute search.
Step 7: Test the After-Sales Support With One Question
Ask the dealer this: “If the glass arrives cracked, do you cover the replacement, or do I file with the freight company?”
Glass tops can arrive damaged. How the vendor handles that determines whether a $1,400 cooktop becomes a $3,500 project.
In 2023, we had a small order with a supplier who kept us waiting while they chased a larger account. That delay cost us a kitchen deadline and changed how I evaluate vendors. The supplier who answered our one-unit replacement question in ten minutes is now the one we call for bigger projects.
Small doesn’t mean unimportant. It means potential. If you are a contractor buying for a tiny renovation or a homeowner replacing a single cooktop, you deserve the same spare parts availability and warranty clarity as anyone else.
Two Mistakes I See Most Often
One: buying on the biggest boost-wattage number. Boost is useful, but if the pan is empty or too small, high power just creates a hot spot. More useful is the lowest simmer setting and the power-sharing logic.
Two: ignoring the cutout template. A cooktop can be ten millimetres wider than the actual hole you need. Manufacturers print exact dimensions in the installation guide. If a dealer changes the model after your countertop is cut, you will have a gap or a re-cut. Measure twice.
And because I work for a company that also makes range hoods: induction still produces steam, smoke, and cooking smells. It doesn’t need combustion venting, but it does need ventilation if you cook anything beyond boiling water. That’s another checklist, but don’t skip it.

- Magnet sticks to every pan you plan to use.
- Minimum pan size is compatible with your smallest pot.
- Pans sit flat on the glass surface.
- Glass edges are smooth without chips or bubbles.
- Manual’s circuit requirement matches your home’s electrical.
- Bridge or zoneless mode behaves how you expect.
- Lockout is easy to activate and hard to trigger accidentally.
- Model is listed with an accredited certification body.
- Dealer answered the after-sales question clearly.
Induction is a great option for many kitchens. It’s fast, quiet, and easier to clean than gas. But no cooktop is worth the hassle of spec-sheet surprises. The best time to ask the boring questions is before you order.
